Six individual theme papers of the EC Concerted Action on Food Safety in Europe (FOSIE): Risk Assessment of Chemicals in Food and Diet have been published in a special issue of Food and Chemical Toxicology. Each paper addresses, for food categories, current methods, reliability and limitations, identification of knowledge gaps, and research needs. The special issue contains the following papers (which were scrutinized in the FOSIE Second Plenary Meeting, held in June 2001) in the fields of hazard identification, hazard characterisation, and exposure assessment:
- Hazard identification by methods of animal-based toxicology
- Methods of in vitro toxicology
- Hazard characterization of chemicals in food and diet: dose-response mechanisms and extrapolation issues
- Mathematical modelling and quantitative methods
- Assessment of intake from the diet
- The contribution of epidemiology for risk assessment of chemicals in food and diet
As a final step, the output of these papers have been integrated into a holistic appraisal of the scientific basis for the characterisation and quantification of risk in the food area. The resulting paper have been scrutinized in the final plenary meeting of the FOSIE project and have been published in 2003 in Food and Chemical Toxicology.
