Trichothecenes with a special focus on DON

2004

A variety of Fusarium fungi, which are common soil fungi, produce a number of mycotoxins of the class of trichothecenes. They are commonly found on cereals grown in the temperate regions of Europe, America, and Asia. The ILSI Europe Natural Toxin Task Force organised a workshop on trichothecenes with a special focus on DON to address all aspects concerning trichothecenes in food. Topics discussed included agricultural aspects and distribution patterns of individual trichothecenes; harvest, storage and processing; toxicology; sampling and analytical methods; assessment of exposure; and risk assessment and prevention strategies. The workshop was convened in Dublin, Ireland from 10-12 September 2003. A number of experts representing different disciplines from the area of mycotoxin research were invited to address specific scientific issues as the basis for a comprehensive risk assessment and recommendations for the development of prevention strategies. In addition, the workshop identified gaps in knowledge in order to encourage further research.

The aims of this two-day interactive meeting of experts were to:

  • Review the current knowledge on trichothecenes with respect to occurrence and analytical methodologies;
  • Identify additional issues that should be addressed and gaps in knowledge;
  • Suggest ways forward in providing advice to risk managers on problem formulation and reducing the uncertainties in the risk assessment and the development of prevention strategies.
